VariCool Provides Blast Chilling Capabilities
There has been an important and exciting development: every VariCool is now available with the option of providing blast-chill capabilities.
VariCool's unique cooling system already sets new standards in cooling performance, chilling over 2.5 times faster than leading UK competitors' products. This is an important consideration, bearing in mind that current legislation requires that all food must be chilled as quickly as possible, so that it spends the briefest time in what is termed 'the danger zone' of 8-68°C.
The problem with conventional units is that they can't extract the heat fast enough from the food - which is where blast chilling comes in.
The 'Guidelines for Cook-Chill and Cook Freeze Catering Systems' state that food should be chilled from 70°C to 0-3°C within 90 minutes. It now seems inevitable that, within the next couple of years, the European Directive in Food Safety will include legislation requiring all catering facilities to use blast chilling to cool down cooked food which they plan to use later. This could potentially be a major headache, through the cost of new equipment or disruption to operations.
You can take away this headache today, since each VariCool, already offering total flexibility between refrigerated and frozen storage, in each drawer, is available with a blast-chill option.
This option, from just £500, will allow one or two of the drawers to be used as a blast chiller, as and when required; when you don't, the drawers can still operate as conventional storage.
This additional facility gives you the option, therefore, of blast chilling at a fraction of the cost of a stand-alone blast chiller, while providing a solution, which not only avoids taking up valuable kitchen space, but also reduces the number of refrigeration items in your kitchen, all of which require energy and maintenance.
